Something quietly flipped in Tolar. For years, the town's food question ended with "we'll just drive into Granbury." Now people in Granbury, Aledo, and Fort Worth are driving the other direction, and the reason sits in an old gas station on the west side of US 377.

That reason is Hill City Chop House, which opened in October 2022 and has since been named a 2023 Texas Monthly Top 25 New Barbecue Joint, a Texas Monthly Top 100 Barbecue Joint in 2025, and Best Barbecue of Hood County in 2024. On the 2025 Texas Monthly list, Tolar sits alongside Fort Worth, Lockhart, and Tyler as one of the Texas cities with a top-tier barbecue joint. For a town this size, that is not a small thing. The Highway 377 Anchor

Hill City sits on West US Highway 377 next door to City Hall, with street parking out front and more around the back. Owners Dustin and Nicole Martin turned a weekend gig into the restaurant after twenty years of smoking meats, and the pit runs the way you would hope. The regulars order the brisket, the wagyu jalapeño sausage, and the hatch chile mac. The visitors read Texas Monthly and order the smashburger.

One detail worth planning around: hours are short and weekend-heavy. Hill City runs Thursday through Sunday, 11 a.m. to 2 p.m., which means if you drift in Monday through Wednesday looking for brisket, you are looking at a locked door. Locals know to eat lunch early on a Saturday before the drive-in crowd catches on.

The Texas Monthly writeup put the tension in plain English. The magazine noted that Hill City may need to rely on out-of-town traffic to stay afloat, but called the smashburger and smoked dump cake well worth the trip. Weekdays. Tolar Taco Co. and Shake and Bake carry the lunch and breakfast rotation. Everything else routes through 377 into Granbury for groceries and errands.

This rhythm sounds small. That is the point. A town becomes a place to live rather than a place to sleep when the week has its own texture, and Tolar's texture is finally thick enough to describe without borrowing from the next town over.

Tolar's growth pattern is different from Aledo's or Godley's. There is no master-planned community reshaping the retail base overnight. The change here is incremental and food-led, with three restaurants opening or leveling up in roughly three years and a school district that keeps the social calendar full. For residents on the acreage lots south and west of town, the practical effect is that the drive into "town" now ends at a real destination rather than a fill-up and a U-turn.
